A sweet, yummy, muffin! Try it with real maple syrup if you get a chance but any maple flavor syrup will do! You may also add 1/2 cup of chopped walnuts to this recipe if you wish.Ingredients | Bourbon Barrel Aged Maple Syrup Trader Joe's½ cup butter, softened½ cup dark brown sugar½ cup real maple syrup1 egg1 teaspoon vanilla extract½ cup half-and-half1 cup all-purpose flour1 cup quick cooking oats2 teaspoons baking powder1 teaspoon baking soda1 teaspoon salt1 teaspoon ground cinnamonDirectionsPreheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.In a large bowl, cream together butter and brown sugar. Beat in maple syrup, egg, cream and vanilla.In a separate bowl, stir together flour, oats, baking powder, baking soda, salt and cinnamon. Stir flour mixture into egg mixture just long enough to incorporate. Spoon batter into prepared muffin cups.Bake in preheated oven for 15 to 20 minutes.
