This was my grandmother's recipe. It was a favorite of my dad's, now is a favorite of my husband. It tastes similar to pumpkin pie, but smoother and better. If you can get over the green color this will be your favorite too.Ingredients | Courteney Cox Husband Now2 zucchini, chopped¾ cup milk⅔ cup white sugar2 eggs, beaten1 teaspoon ground cinnamon½ teaspoon ground allspice¼ teaspoon ground ginger¼ teaspoon ground nutmeg1 (9 inch) prepared pie crustDirectionsPreheat oven to 350 degrees F (175 degrees C).Place zucchini in a pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain. Blend in a blender until smooth. Measure 2 cups blended zucchini; pour into a large bowl.Whisk milk, sugar, eggs, cinnamon, allspice, ginger, and nutmeg together with blended zucchini until smooth.
